Modernization and Global Spread of Sushi (Late 19th Century to Present)

Meiji Era: From the Meiji era (from around 1868), Japan entered the path of modernization. As people moved from rural areas to urban centers, the influence of modernization spread. Around 1920, this process intensified. Japanese people began working in Western companies, which led to changes in their lifestyles and tastes. Many began to create modern-style sushi in cities, which later came to be known as “nigirizushi”. This nigirizushi gained popularity among the masses.

Technological Development:

The 20th century witnessed the development of refrigeration technology, making it easier and safer to store various types of food, including seafood. As a result, sushi ingredients could be transported long distances safely, which led to the spread of sushi beyond Japan.

Post-World War II and Spread: After World War II, sushi began its international journey. Japanese immigrants (especially in California, USA) brought sushi with them. Sushi became familiar to foreigners through Japanese restaurants and regions.

California Roll (1960s–1970s): The California Roll, invented on the west coast of the United States, was a significant turning point. Avocados and crab sticks were used instead of traditional ingredients. This roll became extremely popular. These rolls did not contain raw fish but used cooked crab, shrimp, or other alternatives, which made them more acceptable to Western consumers. As a result, sushi rapidly gained popularity.

Global Popularity: From the 1960s–70s onward, sushi began gaining popularity worldwide. It became known as a healthy and nutritious food in the global market.

Expansion and Variation: Today, sushi is being widely diversified. With global influences, new sushi items and combinations are being tested, creating fusion varieties. People are enjoying sushi with various flavors and rich cultural heritage.
